Simple Sauteed Spinach

Greens are a core part of the Mediterranean Diet and, along with veggies, should make up 50% of your plate. Spinach can easily be grown at home in a cool environment, making it one of our favorites for fulfilling our goal of including more greens in our diet.
Ingredients
- 16oz of fresh spinach, we prefer baby (this will look like a lot, spinach will cook down in volume significantly)
- 2 Tbsp extra virgin olive oil
- 2-3 cloves garlic, minced
- Salt and pepper to taste
Tools
- Collander or salad spinner (if spinach is not prewashed)
- Dutch oven or large sauté pan
- Wooden spoon
Prep:
- Wash spinach if not using prewashed
Directions:
- Heat olive oil in the pan over medium-high heat.
- Add garlic; cook for 1 minute, careful not to burn.
- Add spinach; stir to coat evenly.
- As spinach begins to wilt, add salt & pepper to taste; stir to combine
- Stirring constantly, cook until all spinach is wilted
- Remove from heat, serve, and enjoy!
