Fluffy Scrambled Eggs

If cooking isn’t your thing, mastering scrambled eggs is one of those skills that comes in handy on a late weeknight when you’ve been staring into the refrigerator for too long.
Ingredients
- 1 – 3 eggs
- milk or water (1 tsp per egg)
- 1 Tbsp extra virgin olive oil
- Salt and pepper to taste
- 1 Tbsp feta (optional)
- 2- 3 Tbsp diced tomatoes (optional)
Tools
- Fork or small whisk for beating the eggs
- Small glass bowl
- Small sauté pan
- Rubber spatula
- Measuring spoon – teaspoon & tablespoon
Directions:
- Heat olive oil in the saute pan over medium heat.
- Crack eggs into a bowl
- Add 1 tsp milk or water for each egg (milk will make the eggs creamier, water will make them fluffier)
- Whisk the egg mixture until the yellow yolk is evenly distributed throughout
- Add salt & pepper to taste, whisk to combine
- Pour the egg mixture into the heated pan
- Use the rubber spatula to slowly stir the egg mixture as it cooks
- Remove eggs from heat as soon as all liquid egg mixture has cooked
- Serve and enjoy!
Optional – Top with feta and/or diced tomato
