Classic Hummus

A good classic hummus is amazing, but a bad hummus is like a tasteless paste. This method, with ingredients added in this order, is the best we found for simple but tasty hummus. This recipe can easily be built upon by adding roasted red peppers, artichoke hearts, jalapenos, etc. Some folks like to boil their chickpeas with a bit of baking soda as they feel it makes it extra creamy, just make sure to rinse well before using.

Ingredients

  • 16oz canned chickpea (garbanzo beans)
  • 1-2 cloves minced garlic
  • 1 1/2 tsp salt
  • 5 Tbsp lemon juice
  • 1/4 cup water
  • 1/3 cup tahini
  • 1/4 cup extra virgin olive oil

Tools

  • Strainer/colander
  • Food processor
  • Rubber spatula or spurtle for scraping

Prep:

  • Rinse beans in the strainer and remove any loose skins, discard
  • Mince garlic if using fresh
  • Strain lemon juice if using fresh

Directions:

  • Place chickpeas, salt, and garlic in the food processor bowl. Pulse 7-10 times to combine.
  • Scrape down the sides of the bowl and pulse another 7-10 times.
  • Add the lemon juice and water.
  • Process for 25-30 seconds.
  • Add the tahini. Scrape down the sides of the bowl.
  • Process for 25-30 seconds.
  • Scrape down the sides of the bowl.
  • With processor running, slowly pour in the olive oil.
  • Serve and enjoy!
