Basic Baked Chicken

Sometimes it’s okay to be basic. This chicken is quick, simple, never dry, always juicy, and pairs well with almost everything. We’ve made it 100s of times for good reason.
Ingredients
- 2-3 pieces of chicken (thighs and breasts at roughly 1 – 1 ¼ pounds total)
- 3 Tbsp avocado oil
- Seasoning, to taste
- salt & pepper OR
- seasoning salt OR
- salt & parsley
Tools
- Baking pan
- Meat thermometer
- Measuring spoon – tablespoon
- Cutting board (if removing skin or fat)
- Chef’s knife (if removing skin or fat)
Prep:
- Heat over to 350° (325° if using convection)
- Remove any unwanted or excess skin or fat from chicken
Directions:
- Coat the bottom of the pan with 1 Tbsp of avocado oil
- Place chicken in pan and coat with remaining oil
- Sprinkle chicken with seasoning of choice
- Bake for 22 minutes
- Use a meat thermometer to check that the internal temperature of the thickest part of the chicken is 170°; bake slightly longer (2-3 minutes) if needed to achieve the target temperature. The chicken should be tender and moist but never pink inside.
- Remove from oven and let stand for 3-5 minutes to draw up juices
- Serve and enjoy!
